Twice Baked Potatoes

Mashed potatoes are one of my favorite foods. I know, kinda weird, huh!?! Now, take those awesome mashed potatoes, stuff them full of butter, bacon, and cheese, and bake them so they are crispy on the outside with delicious loaded mashed potatoes on the inside. Welcome to Twice Baked Potatoes!

This is another very versatile recipe and it’s easy to add a topping bar so everyone can choose what they like to add on top.  We love potatoes around here.  If you are looking for ideas using potatoes, you can see all our Potato Recipes here.

Twice Baked Potatoes

butter
bacon
shredded cheese
milk
Options: sour cream, chives, onions, etc.

First, bake some potatoes. My favorite way to do this is Crock Pot Baked Potatoes! We will sometimes make a baked potato bar and put the left over potatoes in the refrigerator for Twice Baked Potatoes later in the week. You can also assemble the twice baked potatoes and freeze them for an easy meal later.

Allow the potatoes to cool enough that you can handle them.  You can also use left over baked potatoes cold from the refrigerator.  

Cut just the top of the potato off lengthwise to leave most of the potato intact.

Scoop out the potato, but leave some of the potato in the skin.

Place the skins on a cookie tray lined with parchment paper.

Placed the scooped out potato in a mixing bowl.  Add some butter, cheese, bacon bits, and enough milk to make it creamy.  Add in any additional options you wish.  Mix it in the mixer.  Place the mixture back into the potato skins.

Freeze for later (see directions below) or bake at 350 degrees for 45 minutes or until hot.  Sprinkle on some additional cheese and place under the broiler to melt the cheese.

To Freeze:
Assemble the twice baked potatoes (minus the cheese on top) and place them on a cookie sheet lined with parchment paper. Freeze them until they are frozen solid. Remove them from the cookie sheets and carefully place them in freezer ziplocks, being careful to keep them right side up.

To Bake from the Freezer:
Remove the potatoes from the plastic bag and place the twice baked potatoes on a parchment lined cookie sheet and bake at 350 degrees for about 1 hour- 1 ½ hours or until hot all the way through. Add cheese on top and place under the broiler to melt the cheese.
