Street Tacos

I grew up in Pacific Northwest.  When we went out for Mexican food it was a real treat.  Fast forward many years later and to my first trip to Texas.  Jason took me to his family’s favorite Mexican restaurant, El Fenix.  It was really good, but very different from the Mexican food I ate growing up.

Many years later, we moved to Texas and I discovered little Taquerias.  Wow!  Just wow!  They have tacos, but there is no lettuce, no cheese, and no tomatoes in them.  What???  That just doesn’t sound right.  How can it still be good?  Enter lime juice and cilantro! 

Our family has nicknamed these “Street Tacos” because often you can find Taquerias in little carts on parking lots.

2-3 lb beef roast, frozen
1/4 C dry Italian Dressing Mix
tortillas
fresh limes, quartered
fresh lemons, quartered
fresh cilantro, chopped

Place the FROZEN roast into the crock pot (isn’t that awesome?).  Sprinkle with the Italian Dressing Mix.  I make my own mix (recipe coming soon!).   It’s so yummy!  Cook on low for 5-6 hours.  Shred the beef with two forks or with the wire whisks in your Bosch.

Stir shredded beef back into the juice it cooked in.  Spoon meat onto warmed tortillas and top with cilantro and a squeeze of lime or lemon.

Street Tacos are a super fast meal to throw into the crock pot in the morning and end up with a delicious dinner that evening. Serve them up with some lime and cilantro and you have an amazing meal.

Ingredients
  1. 2-3 lb beef roast, frozen
  2. 1/4 C dry Italian Dressing Mix
  3. tortillas
  4. fresh limes, quartered
  5. fresh cilantro, chopped
Instructions

  1. When I was in Mexico (Hermosillo), we used to love it when someone from across the border came to visit. We would ask if they wanted to go out for tacos and of course they would say yes. Then we would go to our favorite place. We loved watching their faces when they learned that Mexican food south of the border was not like at home. You got three choices on your taco. Carne, queso (Chihuahua Mennonite one of the best you’ll ever taste) and frijoles. Any combination of those three ingredients were it. I miss those tacos a lot and to this day I still eat frijoles on my tacos. Keeps everything together and tastes so much better.

  2. Those sound delicious! Do you make your own frijoles? I have never made them before. I would like to! I am not sure where the “street taco” version comes from. Most of the owners are Hispanic and speak with accents so it might be somewhere in Mexico. I will have to ask the next time I visit a Taquerias.
