Stove Top Mac N Cheese

My go-to Mac in Cheese recipe is my Crock Pot Mac N Cheese.  But, I don’t always have time to wait for the crock pot.  This Stove Top Mac N Cheese recipe is the one I use when I am in a hurry!

I have found that I can use rice noodles in this recipe so that my son who has allergies is able to eat it as well.  The rice noodles take a little longer to cook.

I originally stumbled across this recipe over at Heavenly Homemakers.  I have modified it a bit so here is my version.

We now need to double this recipe for our crew.  This recipe easily serves 4-5 people.

Stove Top Mac N Cheese

Stove Top Mac N Cheese

2 1/2 C pasta
3 C whole milk (whole milk is important in this recipe)
1 1/2 tsp sea salt
1 C shredded cheese (any cheese you like)

Mix pasta, milk, and salt into a large sauce pan.  You will need to the fat in the whole milk to make this creamy.  Cook over medium high heat stirring constantly until the pasta is tender.  This can take between 15-20 minutes.

Remove from heat.  Add the cheese and stir it in until it is melted.

Colby Jack Cheese is our favorite blend of cheese to use for this recipe, but you can use any type of cheese you like.  We also really like Cheddar.  This is one recipe where having a freezer full of shredded cheese comes in really handy!

The starch in the pasta along with the whole milk will make this super creamy and delicious!

Serve this with ranch dip and carrots and you have an awesome lunch!
