Spanish Rice (that likes me) in the Instant Pot

Spanish Rice.  I have a love/hate relationship with that food.  Actually, more of a hate/hate relationship with it.  You see, my husband loves Spanish Rice. 

And, (I know this is surprising), I run a food blog.  I like to cook. 

But, I can.not.cook Spanish Rice to save my life!  It hates me.  I’m not kidding. 

“No Fail Spanish Rice”- yeah, sure.  Just make me feel bad about my kitchen skills.

“Easiest Spanish Rice Ever”.  Liar.  Fail.  Yep… fail again.

Then, I perfected a recipe for my rice cooker.  I had it.  I had overcome my failures and I was winning in the kitchen once again.  I made it twice.  TWICE and my rice cooker DIED!  I am not kidding.

Seriously.  It has to be the fault of the Spanish Rice.  It’s out to get me.

I’m happy to say that my relationship with Spanish Rice is improving.  On the 1, 375th different recipe attempt, I have succeeded.  More than once, I might add.

So, I am going to quickly post this recipe before it fails or it kills my Instant Pot.

Spanish Rice That Likes Me

3 C white rice, rinsed well
2 ¼ C tomato juice
2 ¼ C water
2 tsp dried, minced garlic (or fresh minced if you prefer)
¼ C butter, sliced
3 tsp chili powder
3 tsp salt

Rinse the rice really well.  Place the dry rice in the inner pot of the IP and fill it with cold water.  Swish it around with your hand.  Pour it in a colander.  Rinse.  Put rice back into the inner pot and repeat the process 3-4 times or until the water in the rice is clear.

DO NOT skip this part.  You are washing off the starch.  If you don’t rinse it well, your rice will not turn out the way you want it to.

See all that starch? Don’t do it. Rinse it until it’s clear!

Once the rice is rinsed well, place the liquid ingredients in the IP first.  Combine the remaining ingredients in the Instant Pot. 

Stir well, making sure that the liquid is evenly distributed throughout the rice.  If it isn’t, you will have crunchy, uncooked rice in the middle of the nicely cooked rice.  Ask me how I know.

Ready to cook!

Cook on High for 4 minutes.  Use a Natural Release (NR) for 10 minutes, then release the remaining pressure.

Remove lid and fluff rice with a fork.  There may be some liquid on top.  Just stir it in.  It’ll be just fine!

I serve this when I make Green Chili Enchiladas, Shredded Chicken Tacos, Street Tacos, or any other time my husband requests it.  🙂
