Raspberry Crunch

I cannot decide how to categorize this amazing Raspberry Crunch recipe.  Is it dessert?  It sure tastes like it.  But with the low sugar content, it could be breakfast.  A side dish?  That would totally work too!  

I have decided that I will make this and eat it any time and not feel guilty!  I might even make it more than once in one day.  That’s just the wild kinda gal I am!  (I know, you are probably shocked right now that I would even consider such a thing.)

WARNING: This may be addictive!  In fact, I may or may not have made this the past three days in a row.  But, you don’t have to tell anyone that!  Really, no, don’t tell!

I first discovered a version of this recipe when I was doing Trim Healthy Mama.  My version IS NOT THM approved!  

Raspberry Crunch

1/4 C peanuts, chopped
2 TB (1 oz) cream cheese
1/3 C frozen raspberries, coarsely chopped
1/2 tsp vanilla extract
2 tsp sugar

Chop up the peanuts and set them aside.  I love my Ulu knife and cutting bowl.  Jason gave it to  me for my birthday a few years ago and I use it all the time!

In a small bowl, combine the cream cheese, vanilla extract, and the sugar.  Stir to combine.

Stir the peanuts into the cream cheese mixture.

Coarsely chop the frozen raspberries.

Stir the raspberries into the peanuts and cream cheese mixture.  

Serve and enjoy a delicious treat!

This makes a decent sized serving or two small servings.  To serve more people, just multiply the recipe by how many servings you wish to have.  I have made a much bigger batch and shared with the children before.  Ok.  Once.  I only made a big batch and shared it one time.  This is one of my “after they go to bed treats.”  Don’t judge!
