Meatloaf

I was never a meatloaf fan until I tasted this meatloaf.  While staying with some friends, they made this for us and my children made sure I got the recipe before we left.

This meatloaf does not have bread crumbs in it as it uses oats instead.  This was important so my son could eat it too.

While we have a couple children who like to put ketchup on top, the rest of us love to pour barbecue sauce on top.  Our favorite BBQ sauce is Rudy’s Sissy Sauce.  Since most of our family eats it, we stick with the “Sissy” (mild) version.  I am telling you, this is great stuff and it makes the meatloaf so amazing!

One of the things I love most about this recipe is that I can make it in the morning and place it in the refrigerator until an hour before dinner time, pop it in the oven, and avoid the crazy dinner prep time that sometimes happens around here.

We cook the rice for a side dish in the rice cooker that has a timer, so that can be completed earlier in the day as well.  I love having dinner prep done in the morning! 

Meatloaf
Yields: 1 meatloaf
1 1/2 lb ground beef
3/4 C milk
1/4 tsp ground sage
1/2 tsp sea salt
1/2 tsp ground mustard
1/4 tsp pepper
1/4 tsp garlic powder
1/2 C oats

Preheat oven to 350 degrees.  In a large bowl, mix all the ingredients together.  The easiest way to do this is with your hands.  Place into a greased 9″ x 5″ glass loaf pan.

Bake for 1- 1 1/4 hours.  Top with ketchup or BBQ sauce if desired.

My family loves rice!  We eat rice several times a week and it works great to fill up tummies and keep the boys satisfied.  We usually serve rice with this meatloaf or the boys will eat all the meatloaf and still be asking for more food!

NOTE
The pictures show two meatloaves.  I doubled this recipe to feed my family.  The recipe as listed is only one meatloaf.

Freezer Directions

Line the baking pans with parchment paper before adding the meatloaf.  Freeze until meatloaf is solid.  Remove from the pans and place in freezer bags, removing the air before sealing.  On cooking day, remove from freezer and place into greased pans in the morning.  Allow to thaw, then cook as directed.  This is another great way to prepare for dinner ahead of time!
