How to Make Old Fashioned Snow Peak Icing

I shared with you the Old Fashioned Chocolate Cake recipe that has been in our family for 5 generations.  I love old family recipes.  They are the best.

Snow Peak Icing is a newcomer recipe to our family.  This johnny-come-lately has only been in our family for almost 50 years.  

This is the only icing that is allowed to grace the homemade chocolate cake recipe and this is exactly how my husband has his cake every single birthday.

Disclaimer

I am not a fan of corn syrup.  I try very hard to avoid consuming it in our family.  This icing has corn syrup in it.  We make this cake once or twice a year and I am happy to make it for my husband.  A little bit of corn syrup won’t kill us.  If you are a purist, you might want to skip this recipe.

Snow Peak Icing

1 ¼ C corn syrup
2 egg whites
Pinch of salt
1 tsp vanilla

  1. In a large bowl, beat the eggs whites until soft peaks form when the beaters are raised. 

2. While the eggs are beating, bring the corn syrup to a boil in a saucepan.

3. Add the salt to the beaten egg whites.  Slowly pour the boiling syrup into the egg whites, continuing to beat until icing is fluffy.  Fold in the vanilla.

4. Place the first layer of the cake on a plate.  Frost the top with the Snow Peak Icing.  Place the second layer on top of the first.  Frost the top and sides of the cake.

Tastes Even Better the Next Day

This cake and icing are even better a few hours later or the next day as the icing soaks into the cake!  It becomes this amazing, moist, delicious, falling apart, chocolate delight.
