Mac N Cheese slow cooker style

I have brought this slow cooker mac n cheese recipe to events almost as many times as I have brought Cheesy Chip Dip.  I have made it in a huge 22 qt. turkey roaster for Thanksgiving for the past several years.  When I bring this, several people in our church always call dibs on the crunchy cheesy stuff on the side of the roaster or crock pot.  It is pretty yummy!  You know the dish is a winner when you have people fighting over the burnt stuff on the edges.  Lol.

I love this mac n cheese.  I love the noodles, and the ooey gooey cheese, and the burnt stuff on the edges of the pan.

I have been making this for years and years.  My husband often requests that I make a double or triple batch so we have left overs.  He is always bummed if we take this dish somewhere and there isn’t any left to bring home.

Crock Pot Mac N Cheese
3 C. (16 oz.) elbow macaroni
½ C. butter, melted
2 eggs, beaten
1 batch Cream of Whatever soup (or 1 can condensed cream of chicken soup)
2 1/2 C milk
1 TB salt (omit if using canned soup)
4 1/2 C sharp cheddar cheese, shredded, divided

Cook macaroni according to package directions; drain well. Place noodles in a 5 or 6 qt. slow cooker; stir in melted butter. Make a batch of Cream of Whatever Soup in a large sauce pan.  Remove from heat, and allow to cool slightly.  Beat the eggs well.  Combine the beaten eggs and milk and add to the Cream of Whatever soup.  Stir the salt into the soup mixture.

Stir soup mixture into the noodles.  Gently fold 3 1/2 cups of cheese into the noodles. Cover and cook on low 4 hours. Sprinkle with the remaining cheese. Cover and cook an additional 15 minutes or until cheese is melted. Yield: 10-12 servings

Don’t forget to eat the yummy, crunchy cooked edges.  

Leftovers warm up well!

Only a single batch will fit in a crock pot.  If you want to make a bigger batch, you can use a large roaster.

Using a roaster as a crock pot hints
-When using the roasting pan as a crock pot, use 200 degrees for low and 300 degrees for high.

-If you are only making a double batch, you may need to decrease the temperature (by about 50 degrees) and the cook time as there is more surface area in a large roaster, and recipes seem to cook faster.

-The outside and top edges of most roasters are very, very hot!  We rarely burn ourselves on our crock pot, but the roaster seems to “get us” more frequently.

-I can make this batch x5 in my 22 qt. roaster.  I believe the biggest batch I have ever made was a quadruple batch and it was a massive amount of mac n cheese!
