Lemon Chicken

I really like a good lemon chicken.  My favorite part about this recipe is the ability to throw it in the oven earlier in the day and not worry about the meal time rush.

Remember all those lemons our neighbor gave us?  This is a great way to use up extra lemons.  I have also used lemon juice in the bottle before.  We have made this for several years now and it is a family favorite.  It’s definitely on the children’s Top 5 meal list. 

Lemon Chicken

6 frozen chicken breasts
1 C olive oil
3/4 C lemon juice
3 TB oregano
1 TB + 2 tsp garlic salt
pepper to taste

Lemon Chicken

Place the frozen chicken in a 9″ x 13″ dish.  My favorite dish for this meal is my stone pan with the lid.  It is is big, heavy, and bulky.  And it cooks amazingly well.

Cover the chicken with olive oil and lemon juice.  Season with oregano, garlic salt, and pepper.  My homemade garlic salt is really good in this dish.

Lemon Chicken

Cover tightly and bake at 250 degrees for 2-4 hours.  Serve the chicken with rice using the juices in the pan to pour over the rice and chicken.  Yum!
