Melt in Your Mouth Lemon Bars

I love lemon.  It’s so refreshing and yummy!  I also love chocolate…. but I digress.  I love a good lemon bar, but I had never made them until we were on vacation a few years ago.  I was reading a bottle of lemon juice… okay… whatever… don’t judge me.  I was on vacation!  As I was saying before I was interrupted, I was reading the bottle of lemon juice and there was this recipe for lemon bars.  Hmmm…

Now, when we go on vacation, we really enjoy staying in condos or guest houses where we can cook some meals if we desire.  I usually do the majority of the meal prep work before we leave home so it will be super fast and easy while on vacation to throw something in the crock pot before we head out for our adventures for the day.  By eating at least a few meals back at the room, we have more resources available to do some fun things that we don’t normally do.  

I need to do a post on how we prep meals for a road trip.  But, not today.  I digress.  Today we are talking about these amazing lemon bars.

So, I was reading the lemon juice bottle, and I saw this recipe.  I looked around and to my disbelief, I had all the ingredients with me!  I whipped these up and we had a super awesome dessert in no time.  

Without further ado… ado… what an odd word.  Opps, I digress again.  Without further ado… for real this time… I give you lemon bars!

Melt in Your Mouth Lemon Bars

1 C butter, softened
2 C sugar, divided
2 1/4 C all purpose flour, divided
4 eggs
5 TB lemon juice
powdered sugar, if desired (of course you want this!)

Preheat the oven to 350 degrees.  

In a medium sized bowl, add the softened butter, 2 C of the flour, and 1/2 C of the sugar.  Stir together until incorporated.  Press this mixture into the bottom of an ungreased 9″x13″ pan.

A super easy way to combine butter with other ingredients in the recipe is to grate the cold butter into the bowl.  I know the recipe calls for softened butter.  If you are going to grate it, don’t allow it to soften first.  That would be a disaster!

Bake the crust for 15 minutes.  Pull it out of the oven and set it aside.

In a separate bowl, stir together 1 1/2 C of sugar and 1/4 C of flour.  Whisk in the eggs and the lemon juice.

Pour the lemon mixture over the baked crust.  Bake at 350 degrees for 20 minutes.

The lemon bars will firm up as they cool.

When they are cooled, sprinkle the top with powdered sugar.

I love the tartness of the lemon mixed with the sweetness of the sugar.  Oh yum!

Lemons remind me of Hot Lemon Cider or Lemon Chicken.  Have I mentioned before that I love lemon?  Oh, I think I did!

  1. Ok, so now your talking my language!! I once asked my wonderful loving wife to make for my birthday a lemon masterpiece. It was a lemon cheesecake with a lemon jello cake on top, and capped off with whipped lemon frosting. Any thoughts on how to incorporate lemon bars into this wonderful lemon creation?

    1. Hi Robert! I think if you were going to incorporate these lemon bars into your masterpiece, you would want them to be the bottom layer so they don’t crush the cheesecake and the jello cake. Hope it works for you! Thanks for commenting! 🙂
