Hot Artichoke Dip

I think the first time I had Hot Artichoke Dip was when we were living in Turkey and we went over to a fellow officer’s home for Bible study.  I used to make this all the time in Germany for our “NASCAR parties”.  

When you are stationed overseas, and you get your friends together to watch NASCAR, about 80% of the time, the race wasn’t on, but we had the party anyway.  Whatever excuse it took to get together with our friends.

I would frequently make this Hot Artichoke Dip and I always made Cheesy Chip Dip as well.  I don’t think I knew how to have a party without these two recipes.

This is an easy  recipe, but chopping up the artichoke hearts can take a few minutes, so make sure to budget time to get the job done.  I have found that the quartered artichoke hearts are cheaper and easier to chop up.

Artichoke Dip

Hot Artichoke Dip

2 (14 oz) cans of artichoke hearts, drained well and chopped
1 1/2 C mayonnaise
1/2 C Parmesan cheese
2 tsp lemon juice
1/2 tsp garlic powder

Heat the oven to 350 degrees.  

Chop the artichoke hearts.

Artichoke Dip

In a medium size bowl, combine all the ingredients.  Spread the mixture in an ungreased 8″x8″ or 9″x9″ baking dish.

 Bake, uncovered, for 25- 30 minutes.

You can put it under the broiler for just a few minutes to brown the top.  Serve hot (or cold if you wish) with chips, celery, crackers, etc.

I like to mix this up in the morning and then put it in the refrigerator until it’s almost time to serve.  Then I pop it in the oven.  I love eating this when it’s hot.
