Homemade Whole Wheat Bread Tutorial

This is my favorite bread.  It is my standard, go-to recipe that I make on a regular basis for my family.  My dear friends, the Wilkes Team, taught me how to make this years and years ago and this is the recipe we used (with a couple small modifications) the first time I ever made bread.

I use this recipe in the classes I teach and I wanted to put this homemade whole wheat bread tutorial out there for all of you.  I have seen many pictures of the bread my students have made using this recipe; I am happy to share this recipe with you!

Single batch                                                                        
2 1/2 C warm water, 110-115 degrees                          
1/2 C honey                                                                            
1 1/2 TB SAF instant yeast                                                
10-12 C whole wheat flour, divided                                    
2 1/4 tsp sea salt                                                                   
2 large eggs, beaten                                                                         
1 TB Apple Cider Vinegar                                                 
1/2 C butter, softened                                                          
2 TB butter, melted (optional for soft crust)

Get out all of your supplies and preheat oven to 170 degrees. Turn oven off once it reaches its preheated temperature.

Combine water, honey, and yeast in a 4-5 quart mixer bowl with dough hook. Stir mixture to dissolve some of the yeast.  You want to get the yeast wet.  Sponge the yeast (let sit until foamy: 5-10 minutes).

If after 10 minutes, the mixture has not increased in volume, your yeast is no longer good. It may have been old yeast or the water may have been too hot and killed the yeast. DO NOT proceed with the recipe if the yeast mixture has not increased in volume.

Grind enough hard white wheat berries to make 3 cups of flour.

Add 3 cups of flour, salt, eggs, and vinegar to the mixer. Mix on low until combined.

Grind enough hard white wheat berries to make 7-8 cups of flour.

While mixing, add 6 cups of the flour until almost fully incorporated. Add the remaining flour if necessary to make the sides of the bowl clean.

Cut butter into tablespoon pieces and add to mixer while it’s running. Mix for 7-8 minutes (Bosch speed 2).

Grease or butter the bread pans. Divide dough into 3 balls.  If you are super hyper about your loaves all being the same size like I am, these will usually weigh between 1.7 and 1.9 lb each.

Press each ball into a ½” thick rectangle. Roll up tightly, pressing dough into roll with each turn. Pinch the ends together. Place dough, seam side down, in well greased 8″ bread pans.

Let rise for 45 minutes-1 hour, 15 minutes or until double in size. (Let it rise in the warm oven with the oven light on.)  The rise time will depend on the temperature in the home and the temperature and moisture levels outside.

Take bread out of the oven, and preheat oven to 350 degrees. Bake for 20-25 minutes. Remove from oven and wait 5-10 minutes, then remove from pan and allow it to cool on wire racks. Brush tops with 2 TB melted butter for a soft crust.

If using a KitchenAid to make this bread recipe, you will need to modify it down to 2 loaves.  A Bosch can handle 6 loaves if you wish to double this recipe.

  1. BEST bread ever! Take a class and learn it from scratch because RaShell is a terrific teacher! My kids prefer this over store bought bread any day.

  2. The techniques and recipe are fantastic. My go-to bread recipe became my no-more recipe …. this is the one. I can now make 6 loaves in half the time I did before … and the recipe has been totally forgiving. Even when substituting an ingredient (coconut oil for butter, sugar for honey) or forgetting to put in the butter totally … I haven’t come up with a bad loaf yet. It is always light and delicious!

  3. My family and I took RaShell’s bread class and learned a lot along with having fun baking together. She is an amazing teacher and very patient. One of my children is allergic to wheat, however after making this wheat bread from scratch he hasn’t had a break out. We are so grateful for RaShell and highly recommend taking her bread class. You will never go back to store bought bread again!
