Homemade Strawberry Cake with Strawberry Cream Cheese Frosting

My sweet girl and oldest child turned 17 this month.  I don’t think I’m old enough to have a 17-year-old.  Nope.  I’m pretty sure I’m not.

This year, she requested Strawberry Cake with Strawberry Cream Cheese Frosting for dessert.  That made me very, very happy.

I love this cake.  It’s pretty and pink.  With 5 male children around here, we don’t get a lot of pink.  Good thing we have Hannah.  And this cake.

Homemade Strawberry Cake

A very sweet lady named Jennifer brought this cake to dinner at a friend’s house years and years ago and she sweetly gave the recipe to me.

This also works well as a 9”x13” cake.

Homemade Strawberry Cake

1 box white cake mix

3 oz box strawberry Jello

10 oz frozen strawberries in syrup, thawed, pureed, and divided

4 eggs

½ C vegetable oil

¼ C water

Lightly grease two round 9” cake pans.  In a large bowl combine cake mix and Jello.  Add 1 ¼ C pureed strawberries, eggs, oil, and water.  Beat at medium speed until smooth.  Pour into the prepared pans and bake at 350 degrees for 20-30 minutes or until toothpick comes out clean.

Once it is completely cooled, frost with Strawberry Cream Cheese Frosting.

¼ C butter, softened

8 oz block of cream cheese, softened

¼ C frozen strawberries in syrup, thawed, pureed, and divided

½ tsp strawberry extract

7 C powdered sugar

In a large bowl, beat the butter and the cream cheese until creamy.  Beat in ¼ C pureed strawberries and the strawberry extract.  Gradually add powdered sugar, beating until smooth. 

Frost the bottom layer of the cake.  Add the top layer.  Frost top and sides.  Eat.
