Gluten Free Literal Ice Pops

Sometimes a dad can really step in for the win!  Such is the case with my friends, Andrew and Jessica.  This dad hit a home run with his kids for sure!

But before I share what this amazing dad did, let’s talk about summer.  HOT summer.  Like, “It’s so hot I think I might melt into a puddle and evaporate.”  

My children love to play outside.  Even in this insanely hot weather.  Then they come in with flushed faces, looking like they might pass out at any moment, gasping for water only to take a drink, and then run right back outside again.

I have had my eyes peeled for cool summer treats and that’s when I heard about what Andrew made for his kids.  I quickly messaged Jessica to see if I could share this amazing recipe with all of you!  She asked Andrew and he graciously agreed.

I have a son that has allergies and I love it when I come across a recipe that he can enjoy along side his siblings.  This is one that all the children can enjoy together.  It’s also Trim Healthy Mama approved which is a bonus!  😉

Gluten Free Literal Ice Pops

  • water
  • Popsicle molds
  • hot children

Pour the water into the popsicle molds.  These popsicle molds look so awesome- they are on my wish list!  Until then, I will settle for the ones below.

 Freeze until frozen solid.  Give to hot children.
