If you have spent any time around here at all, you know that one of my sons has severe allergies. He recently celebrated his 10th birthday and he knew right away what dessert he wanted his Sissy to make him.
Several years ago we found a flour-less chocolate cake. I didn’t even know such a thing was possible! I really didn’t think it would work. And, I thought it would taste pretty gross.
I stand corrected on all accounts. It is possible to make a cake with no flour, it does work, and it tastes amazing!
My daughter actually made two of these this time so we could slice up the leftovers and put them in the freezer for my son. It freezes beautifully! He now takes it to church for lunch each week. We take it out of the freezer in the morning and by the time it’s lunch time, it’s defrosted and ready to eat.
I think I heard our whole family cheer when they found out this was the birthday dessert! One word of caution! DO NOT cut big slices of this. It is so rich, you might go into a coma. Little slices! Little slices!
Gluten Free Chocolate Chocolate Cake
1 C semi-sweet chocolate chips
½ C unsalted butter
¾ C sugar
Scant ¼ tsp salt
2 tsp vanilla extract
3 large eggs
½ C unsweetened baking cocoa powder (we use ¼ C dark baking cocoa and ¼ C regular baking cocoa)
Preheat oven to 375 degrees. Lightly grease a 8” round pan. Trace the pan on a piece of parchment paper, cut out the circle, and place it in the bottom of the greased pan. Now grease the paper. Yes, you grease the pan and the paper. Just do it.
Melt the chocolate chips and the butter in a pan over medium heat, stirring constantly to make sure you don’t burn the mixture. Pour into a mixing bowl.
Stir in the sugar, salt, and vanilla. Cool the mixture slightly.
Beat in the eggs, one at a time, beating until smooth. Add the baking cocoa powder and mix well so there are no baking cocoa clumps. (That would be gross!)
Pour into greased 8” pan. Bake for 25-30 minutes.
Remove from the oven and allow the cake to cool for 5 minutes. Loosen the edges of the ckae with a knife. Turn the cake over onto a serving plate. Cool completely before glazing.

In a saucepan, melt the chocolate chips and heavy cream over medium heat, stirring constantly so it does not burn.
Spoon the glaze over the cooled cake, allowing it to drip down the edges of the cake. Add a few chocolate chips as a garnish.
Allow the cake to rest for several hours so the glaze will set.
There you have it! An amazing no-flour, incredibly tasty cake!

This cake looks amazing for anyone, allergies or not! No wonder your son wanted it for his birthday cake! I have to show this to may gf daughter and see if she wants it on her birthday list. Recently, I baked a flourless brownie recipe that was surprisingly good ( I didn’t think it would hold together, but like your cake it does!) Now we have to try this cake!
