Garlic Roasted Vegetables

I like vegetables.  I really, really like a wide variety of vegetables.  My children do too.  My husband… not so much.  But he has come a LONG way over the years.  He will now eat some of the veggies I serve.  Corn?  Always!  Broccoli?  Yep.  That too.  Those are his favorites.

This is one of my all time favorite ways to make a big pan of vegetables (that even my husband will eat).

Garlic Roasted Vegetables

Garlic Roasted Vegetables

Frozen vegetables (we usually use broccoli, cauliflower, and a couple different kinds of squash)
Olive oil
Garlic salt (homemade is the very best!)
garlic powder
Parmesan cheese

Place the frozen veggies on a baking sheet that has a lip.  Drizzle the vegetables with olive oil.  Sprinkle with garlic salt, garlic powder, and Parmesan cheese.

These can also be fried in a frying pan. Place the frozen vegetables in a large frying pan. Drizzle with olive oil. Sprinkle with garlic salt, garlic powder, and Parmesan cheese. Cover with a lid and fry for about 10 minutes over medium heat. Remove the lid and stir the vegetables well. Continue to stir and cook until the vegetables are tender.
Homemade Garlic Salt is amazing!

Bake at 350 degrees for 30 minutes.

These can also be fried in a frying pan.  Place the frozen vegetables in a large frying pan.  Drizzle with olive oil.  Sprinkle with garlic salt, garlic powder, and Parmesan cheese.  Cover with a lid and fry for about 10 minutes over medium heat.  Remove the lid and stir the vegetables well.   Continue to stir and cook until the vegetables are tender.

I like to serve this with meals that I make in my crock pot, since I need the oven for the Garlic Roasted Vegetables.
