Fried Potato Skins

We love potatoes around here.  We make them often.  Baked potato bar with cheese sauce, French fries, twice baked potatoes, hash browns, and cheesy hash browns… it’s all good!  Potatoes are cheap and very versatile.  They also fill up all the boy tummies around here!

My dear friend Danita from O Taste and See Blog taught me how to make Fried Potato Skins.  Not only is she my sweet online friend, but we also happen to be friends in real life too!  She has graciously allowed me to share this recipe with you.  Make sure you stop on by O Taste and See Blog and check out all her amazing recipes.

Potatoes, cheese, and bacon.  Yep!  Cannot go wrong with that! 

After we make Twice Baked Potatoes, we sometimes have potato skins left over.  This is the perfect way to use those up! 

We have also found that we can freeze the potato skins and use them straight from the freezer to make potato skins later.  So handy and fast!  We like to pull them from the freezer and make these on Sunday after church.

Fried Potato Skins

Baked potatoes (I like to bake them in a crock pot)
Cheese, shredded
Bacon bits
Palm Shortening or another oil for frying
Sour cream- optional
Onions- optional
Chives- optional

Heat the oil in a Fry Daddy or in a deep pan with enough palm shortening or oil to cover the potatoes.  I prefer to fry in palm shortening.  You can read about why I choose this healthy oil.

Cut a slice of the baked potatoe off length-wise.

Fried Potato Skins

Do this from each side of the potato.  This can be potatoes that are still hot from baking, or left over baked potatoes from the refrigerator.  We then peel the rest of the potato and shred it for hash browns

Scoop the inside of the potato out (save to make a small batch of fried potatoes) leaving a little bit of potato around the bottom and the edges.

At this point, you can freeze the potato skins to use later or fry and make them now.

 

Fried Potato Skins

Fry the potato skins in the hot oil until they are golden brown.  Place the fried potato skins on paper towels to drain.

Fill each skin with shredded cheese and bacon bit.  Place on a parchment lined cookie sheet and place until the broiler until the cheese is hot and melty.

Top with any desired optional toppings.

To Freeze:
Place the skins on a cookie sheet.  Freeze until solid, then place the frozen skins in a freezer ziplock bag until you are ready to use them.  

To Make from Frozen:
Pull the skins out of the freezer.  Fry them until they are golden brown.  This will take a little longer then it would if they weren’t frozen.  Place the fried potato skins on paper towels to drain.  Fill each skin with shredded cheese and bacon bit.  Place on a parchment lined cookie sheet and place until the broiler until the cheese is hot and melty.  Top with any desired optional toppings.
