I love salads. And I love avocado. And I love limes. I have been on a huge avocado and lime kick lately. I can’t help it. I love the combination and my local grocery store had avocados on sale for $.29 each! Oh baby! Bring on the avocados!
I’ve been perusing Pinterest for avocado and lime recipes. I found a cilantro lime dip that I must try! I also saw all kinds of dressing and vinaigrettes. I took a look at a few, and I came up with this recipe. I really like it. My daughter does too! But, she hates avocado… it’s okay. I have forgiven her.
I loaded up my bowl with a couple different kinds of lettuce and a bunch of avocado and chopped tomatoes, then drizzled this dressing all over it. It was pretty amazing if I say so myself.
It’s a light, citrus tasting vinaigrette that has plenty of flavor.
Does anyone else have a hard time spelling vinaigrette, or is it just me? I want to spell it vinagret. That is clearly not correct! So, I shall continue to spell it vinaigrette even though I don’t like it.
Without further ado, let me share my latest creation with you.
Cilantro Lime Vinaigrette
½ C lime juice
½ C olive oil
2 TB honey
3-4 tsp cilantro, chopped
1 tsp kosher salt
Combine all the ingredients and drizzle over your salad. Store any leftovers in the refrigerator.
