Chocolate No Bake Cookies

I grew up eating a very similar version of these cookies.  They are so incredibly delicious!  I think one of my sister’s children was made of Chocolate No Bake Cookies, she ate so many of them when she was pregnant.  Hey, don’t judge!  Have you tasted these?

The version I ate as a child did not  have the peanut butter in them, but was exactly the same otherwise.  I happen to love peanut butter and I think it makes these even better!  And protein is good – Right?  So, these are not healthy and not all that great for you, but as a once-in-a-while treat they will be okay (as long as you don’t eat the entire batch at one time!)  At least there isn’t any preservatives in it!  That has to count for something! 

I’m sure if I use organic sugar, organic butter, organic peanut butter, and homemade vanilla extract that will some how make it all good for me.  Right?

Chocolate No Bake Cookies

Chocolate No Bake Cookies
1/2 C butter
1/2 C milk
2 C sugar
1/2 C baking cocoa
1/2 C creamy peanut butter
1 tsp vanilla
3 C oats

Combine butter, milk, sugar and baking cocoa in a large sauce pan and bring to a boil, stirring constantly until combined and melted.  Boil for 1 1/2 minutes.  DO NOT BOIL LONGER!  You will burn it and it will be really gross.  Ask me how I know. 

Chocolate No Bake Cookies

Once mixture has boiled for 1 1/2 minutes, remove from heat and stir in peanut butter until peanut butter melts.  Add vanilla and stir well.  Now stir in the oatmeal.

Chocolate No Bake Cookies

Drop by the spoonful on parchment paper and allow them to cool and set up.  If you are super impatient, you can eat them all warm and gooey.  If you are slightly impatient, you can put them in the fridge to set up more quickly.

I store these in the fridge just so they aren’t sticky, but you don’t have to refrigerate them.

Now, grab a big glass of milk (to help offset the sugar high you are about to get) and enjoy an amazing chocolate cookie.
