Chicken Salad Bagel Melts

The children and I tend to eat different things than my husband does.  This isn’t a problem since Jason isn’t able to come home for lunch.  Lunch time is when we eat the things that Daddy isn’t fond of.  I think if you look in the dictionary for “meat and potatoes guy” the definition is Jason.  😉

This just happens to be a lunch meal for us.  The children really enjoy it.  My son that has allergies is unable to eat the bagels so we make his on homemade wheat bread or rice cakes.

Chicken Salad Bagel Melts

Canned chicken
mayonnaise
mustard
sweet pickle relish
bagels
cheese

Open the can of chicken and place the chicken in a bowl.  Use a fork to break it up into small pieces.  Add mayo and mustard to taste.  Stir in some sweet pickle relish for added flavor.

Split the bagels in half and lay them face up on a baking tray.  Spread some chicken salad on each bagel.

Place under the broiler until hot.  

Add cheese to each bagel half.  Return to the broiler and broil until the cheese is melted.  Serve!

This is a super fast meal to whip together.  And it’s tasty too!  Throw together a quick salad and you have a wonderful lunch!
