Chicken Fried Rice

I love Chicken Fried Rice.   As our family has gotten bigger, we have outgrown our 12″ cast iron skillet for making this meal.  So, we graduated to… and from… two 12″ cast iron pans.  This is becoming a problem.  

While on vacation last summer we stayed with a friend in Ohio (Hi Julie!) and she had an electric skillet and made Chicken Fried Rice in it for us.  BINGO!  That is the solution!  We ordered an electric skillet off of Amazon and we use it all.the.time!  This is one of my favorite kitchen appliances.  We use it for so many meals.  I wish I would have found it years ago.  I use it for regular size meals and the meals that we have to double for our family now.

Okay, sorry, I got a little side tracked telling you about my love for my electric skillet.  But that is NOT why you came here.  You are looking for an awesome Chicken Fried Rice recipe.  So, let’s get to it!

Chicken Fried Rice

2 C cooked chicken, cubed
8 cloves of garlic, minced
1/2 C onion, finely minced
*3 eggs, beaten
4-6 C cooked rice, COLD
**1 C peas and carrots, cooked
2 TB oil
1/2 C soy sauce
1/2 C white cooking wine (optional, but so yummy!)
crushed red pepper (optional)

Heat the oil and soy sauce in a large skillet or an electric skillet.  Add the rice and the cooking wine. Fry the cold rice.  

Push the rice aside and scramble the eggs.  Stir scrambled egg into the rice.  

Stir in the chicken and veggies.  

Push the mixture to the side, add a little more oil, and saute the onion and garlic until soft.  Stir cooked onion and garlic into the rice mixture until well combined.  

Add more soy sauce to taste.  Stir in or sprinkle individual servings with crushed red pepper to taste.

*We have skipped the eggs in the past due to an egg allergy in our home and the recipe still tastes delicious!  This recipe is very flexible and can be easily modified to meet a variety of dietary needs.

**We change the veggies up according to what we have on hand.  Sometimes we use frozen mixed veggies, sometimes just peas & carrots, whatever you like to put in will work.  I love the flexibility of this recipe!

Ingredients
