Cheesy Noodles and Peas

Several years ago I created this meal for my children and me for lunch.  We often eat meals at lunch time that I don’t make for dinner, simply because my husband isn’t quite as…. shall we say…. adventurous as we are when it comes to food.  He likes the normal meals that we have in the rotation and is not a big fan of trying something new.  So, I experiment on my children!  Now before you start telling me how mistreated they are, I will have you know that I eat my experiments along with them!  We have had some not-so-great experiments and some really awesome ones as well. 

This one was a big winner!  What is there not to like about noodles, cheese, and crushed potato chips?

Cheesy Noodles and Peas
Double batch Cream of Whatever Soup (or two cans cream of chicken soup)
1 tsp thyme
1 tsp salt
2 C cheddar cheese, shredded and divided
1 C frozen peas, cooked and drained
8 oz spaghetti noodles, cooked and drained
Couple handfuls of potato chips, crushed
1 can chicken or tuna, drained well (optional)

Make the Cream of Whatever Soup in a large pot. 

Cheesy Noodles and Peas

Add thyme, salt, and 1 1/2 C of cheese.  Stir well.  Add in peas and pasta.

Stir in chicken or tuna if desired.  Top with remaining cheese and crushed potato chips.  Yum!

Ingredients
  1. Double batch Cream of Whatever Soup (or two cans cream of chicken soup)

Instructions
  1. Make the Cream of Whatever Soup in a large pot.
  2. Add thyme, salt, and 1 1/2 C of cheese. Stir well.
  3. Add in peas and pasta and stir gently.
  4. Stir in chicken or tuna if desired.
  5. Top with remaining cheese and crushed potato chips.
Notes
  1. This makes a wonderful hot lunch!
