Breakfast Sausage

We don’t eat a ton of pork, but my husband loves sausage and bacon.  I am not a fan of all the junk that is dumped into sausage or the chemicals in the bacon.  We have found an amazing nitrate free, smoked bacon at Costco that we love but it is expensive so we don’t eat it that often.  

I can get ground pork straight from the farm so I have been on a search for a good breakfast sausage recipe.  I found several and I came up with this version based very loosely on a combination of several other recipes from all over the internet.  That’s how I often create recipes!  I’ve had some winners and some…. not winners!  ha ha  This one is good.  I already tested it for you.  It’s okay.  You can go ahead and try it!

If you don’t like a sweet sausage, skip the brown sugar.  You can bump up the heat by adding more cayenne pepper.

2 lb. ground pork
2 tsp dried sage
2 tsp sea salt
1 tsp black pepper
1/2 tsp marjoram
1/8 tsp cayenne pepper (or more- to taste)
1 pinch cloves
1/2 tsp cumin
1/2 tsp oregano
1/2 tsp ginger
1 tsp basil
1 tsp basil
1 TB brown sugar (optional)

Combine all the spices together.

Sprinkle over the ground pork and mix it in very well.  The easiest way to do this is with you hands.

Cover the ground pork mixture and place in the refrigerator for 12-24 hours.  Paddy the ground pork and fry over medium heat until it is cooked all the way through and there is no pink.

I make a master batch of this seasoning by quadrupling the spices.  I then  use 1/4 C of seasoning mix per 2 lb of ground pork.
