Breakfast Sandwiches

My husband gets up very, very early in the morning.  He has an hour commute for his job and he  leaves the house early to get to work on time.

From the very beginning of our marriage, I have gotten up to make breakfast for my husband before he leaves for work.  It is a habit I started because I want to spend a few minutes with him each day before he leaves; 18 years later, I still get up and make him breakfast for the same reason.  When my husband went back to work after our sixth child was born, he insisted that I go back to sleep instead of getting up and making breakfast and lunch for him.  I reluctantly took him up on the offer.  For.one.morning.  That was it.  I couldn’t take it!  I need that morning time to connect with him and I miss him way too much if I don’t get it.  If I am remembering correctly, that is the only morning I haven’t gotten up with him.  My marriage is worth a little less sleep.

I created these Breakfast Sandwiches so I could send my husband off with a full stomach and I make them more days than I don’t. 

You could make them with any ingredients you desire.   My husband’s favorite is egg, cheese, and sausage.  I use an egg from our hens and no nitrate sausage.

Breakfast Sandwiches
1 egg, fried
1 sausage patty, cooked*
shredded cheddar cheese
butter
English Muffin

Fry up the egg in a little bit of butter.  Sprinkle some shredded cheese on it when you flip the egg to the second side.

Breakfast Sandwich

Warm up the sausage patty.  Toast the English Muffin and butter it when it is cooked.

Place the warmed sausage patty on the bottom side of the English Muffin.

Place the egg on top of the sausage.  Put on the top of the English Muffin.  Enjoy!

*On the weekends, we usually fry up some sausage patties and keep them in the refrigerator so we can warm them up on the early weekday mornings.

  1. My kiddos love these! They really like Canadian bacon so I will typically get turkey Canadian bacon for them. It isn’t uncommon for them to make these as snack either. For snack they usually don’t put the meat on it (to save costs for our large growing family) I have found this to be a great filler snack for those hungry teenagers!
