Breakfast Burritos

We have a potluck lunch every Sunday at our church.  I love our weekly time of fellowship over a meal.  One of our dear friends, Moni, sometimes brings Breakfast Burritos for lunch and I think I hear everyone cheer when she does!  They are so yummy!

Our family has made Breakfast Burritos for years.  They are so incredibly yummy.

They are super versatile and can be made with so many different ingredients.  I’m going to tell you how we  usually make them.  Feel free to add or subtract ingredients as desired.  I’m not going to give you amounts as there is no magic number here.  For reference, our family of 8 starts out with a dozen eggs, a pound of sausage, and two pounds of hash browns.  Sometimes we use our homemade hash browns with this recipe and sometimes we buy frozen country style potatoes that have onions and bell peppers.  This recipe makes a lot of burritos!  We make this up in our favorite new appliance, our electric skillet!

Breakfast Burritos

tortillas (use corn for a gluten free meal)
eggs, scrambled
sausage, fried
bacon, chopped and fried (or bacon bits)
cheddar cheese, shredded
hash browns, fried
salsa (optional)

Cut the bacon into small pieces.  Fry the bacon and sausage.  In the same pan, scramble the eggs. At the same time, fry the hash browns in a different pan.  Stir all the ingredients together.  

Heat up the tortillas.  I love my cast iron tortilla griddle, it does a wonderful job! .  We use it for multiple things, but warming up tortillas and making quesadillas are a couple of my favorite uses.

Put some shredded cheese on a warm tortilla and put in a scoop of the burrito filling.

Add slasa if desired and roll up the tortillas.  

To Freeze: 

These can be made in a big batch and then frozen for a quick breakfast.  Allow the Breakfast Burritos to cool, wrap them in plastic wrap, then wrap them in tin foil.  Place the burritos in a gallon freezer ziplock bag.  

To Eat Frozen Burritos:

Remove burritos from the plastic bag.  Remove the tin foil.  Open one end of the plastic wrap and microwave until hot.  These can be taken from the freezer the night before and allowed to defrost in the refrigerator.  They can then be heated in the oven, but remember to remove the plastic wrap first!  🙂

  1. We love breakfast burritos! We use a touch of sour cream too. Often we add a touch of fajita seasoning for some extra flavor. There are so many great ways to make them!
