Black Beans and Rice

As a child, I never ate beans.  I didn’t like them and I thought they were yucky.

Then, I grew up.  I saw a recipe for black bean soup and it sounded… good!  I made it for my children and myself for lunch and it was awesome.  My children loved it.  I loved it.  Good deal!

I started buying black beans.  Then, my husband went on a work trip to Puerto Rico.  He loved the food and he kept talking about these beans he had there.  I tried to replicate them, but I couldn’t find a good recipe, but it opened a door to try eating more beans in our family.

I took the spices I use in the black beans and used those on a couple cans of black beans.  We served it over rice with cheese and lime juice as optional toppings.  It was really good!  The whole family loves it.  Black beans and rice is a meal we now eat several times a month.  It is tasty, filling, fast to make, and cheap!  It doesn’t get much better than that!

Black Beans and Rice

We make the black bean seasoning in bulk since we eat this meal on a regular basis.  We use 1 TB of seasoning per can of beans.  That makes it even faster to assemble this meal!  We put the rice in the rice cooker with the timer and put the beans on right before dinner.  Paired with some cooked frozen veggies, we have a super fast meal!

Black beans and rice seasoning in bulk. Add 1 TB per can of beans.

Black Bean and Rice
2 cans black beans, 1 can drained
2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp cumin
1 tsp marjoram
1 tsp rosemary
1 tsp salt
rice, cooked
lime juice, optional
shredded cheese, optional

Drain one can of beans.  Add the drained and undrained cans of beans into a pan.  Add all the seasonings and stir well.  Heat over medium heat until hot.  Serve over cooked rice.  Add lime juice and shredded cheese if desired.

Instructions

  1. Squeeze lime juice and add shredded cheese over the beans if desired. Cook the rice in a rice cooker for a super quick meal.

  1. Just thought I would go ahead and point out that this beans and rice recipie has received the husband seal of approval! I was never really a beans fan either, but these have a great flavor and are quite tasty!
