Beef and Bean Burritos

This is such an easy meal to prepare and it is super yummy!  I haven’t always been a fan of beef and bean burritos but I really like these.  They are a great source of protein and help fill up tummies which is always a positive around here.

Beef and Bean Burritos
1 lb ground beef
1 can refried beans (or 1 can pinto beans, smashed up)
1/3 C salsa
1 C shredded cheddar cheese
Additional shredded cheese for the top
12 tortillas (use corn for gluten free)

Brown the ground beef (see hint below). 

Mix beef, beans, salsa, and cheese in a bowl.  The salsa really adds some amazing flavor to it!  My husband’s favorite restaurant is El Fenix and I buy our salsa from them.

Spoon the mixture onto the middle of the tortillas.

Roll up tortillas and place them seam side down in a 9×13 inch pan.

Cover and bake at 350 degrees for 20-30 minutes.

Uncover and sprinkle with more cheese and bake until cheese is melted.

Serve with Spanish rice and a veggie for a wonderful meal!  These warm up really well so if there are any left over, I send them with my husband for his lunch.

Hint
I usually fry up 8-10 lbs of hamburger at a time and place 1 lb of cooled, fried hamburger in a quart freezer bag and put them in the freezer.  It defrosts quickly and makes meal time easy.

Ingredients
  1. 1 lb ground beef

  1. I think these would be great to freeze and have on hand for a quick meal or snack! Any suggestions on heating from frozen?

    1. Since all the ingredients are already cooked, I would assemble the burritos, using a toothpick to seal the seam then place them face up on a cookie sheets and place them in the freezer overnight. Once frozen, the toothpick could be removed and the burritos can be stored in a freezer bag. If baking them in the oven from the freezer, I would allow them to defrost 30-60 minutes first.
