Baked Lentils

I don’t ever remember eating lentils (at least, not on purpose) before my sister gave me this recipe  for Baked Lentils years ago.  This is a real winner!  Thanks Sis!

Lentil?  What is a lentil?  It’s a legume.  They come in a variety of colors- black, brown, green, yellow, redish orangish (is that a color?).   We used brown for this recipe.

My children love this!  It is very tasty.  I love that it’s nutritious and a cheap way to fill up tummies!

I bake this in a 11” x 13” pan.  To double this recipe you will need two 11” x 13” pans.

Baked Lentils

1 ¾ C lentils
2 C water
1 whole bay leaf
2 tsp sea salt
¼ tsp pepper
¼ tsp marjoram
¼ tsp sage
¼ tsp thyme
1 small onion, chopped
2 cloves of garlic, minced
2 C canned tomatoes, drained well
2-3 large carrots, sliced
½ C celery, finely chopped
2 TB fresh parsley, finely chopped
3 C shredded cheese

 Combine all the ingredients except for the celery, parsley, and cheese in a 11”x13” pan.  Cover tightly and bake at 350 degrees for 30 minutes.

Uncover and add the celery and parsley.  Cover and bake for another 40 minutes.

Uncover and sprinkle with the shredded cheese.  Bake uncovered for 5-10 minutes or until the cheese has melted.

  1. It’s funny, I was wishing I could find another good lentil recipe about 2 minutes before I saw your post! We’ll definitely have to try this. I first used lentils in a lentil, rice, and tomato soup recipe I found at Christmas. I’ve made it several times since. It’s my favorite soup! Ever since, I’ve kept an eye out for good lentil recipes.
